World Counterstrike 2 Champion Re-signs With Vitality

Paris, France. April, 2024 – Leading esports club Team Vitality is thrilled to announce the contract renewal of star Counter Strike 2 player Mathieu ‘ZywOo’ Herbaut. Having been with the club since the beginning of his professional career in 2018, ZywOo has renewed his commitment to the organization until 2026, ready to take on new sporting challenges.

To celebrate this momentous occasion, Team Vitality hosted an exclusive event at the foot of the Eiffel Tower. Fans gathered to witness the unveiling of ZywOo’s renewal, which was broadcast live on Team Vitality’s social media accounts.

AN EXTRAORDINARY CAREER IN COUNTER-STRIKE

Mathieu Herbaut started playing Counterstrike when he was only seven years old. He began his career with Team Vitality in 2018, joining the CS:GO roster as the French club ventured into the title. Alongside French teammate Dan “apEX” Madesclaire, he negotiated the club’s turning point towards the international scene at the end of 2021. By the end of 2023, the CS2 roster was crowned the best team in the world by HLTV.

Since entering the professional scene, ZywOo’s exceptional skill has not only led Team Vitality to multiple championship titles, such as securing the final CS:GO Major on home soil in Paris, but has also garnered numerous individual awards, including being crowned HLTV’s Player of the Year award in 2019, 2020, and 2023 and his inclusion in the prestigious Forbes 30 under 30 list in 2021.

These accomplishments have earned him the affectionate nickname of ‘The Chosen One’ within the Counter-Strike community. A nickname all the more relevant as the young Frenchman was born in the same month as the release of the original Counter-Strike game.

Since its creation in 2013, Team Vitality has had the mission of identifying, developing, and nurturing talent in the esports scene. Among the young athletes who have particularly marked the history of the club is ZywOo.

Ten years later, Team Vitality and ZywOo have left an indelible mark on the esports landscape, winning numerous titles and consolidating their position as leaders in the Counter-Strike scene. As they look towards 2024, their goal is to build on these achievements and continue to lead the way in innovation and excellence in esports.

ZywOo’s career so far

Courtesy of dotesports.com. When it comes to talented and renowned CS players, there are hardly more popular names than ZywOo. In January 2024 the French sniper earned HLTV’s Player of 2023 reward. He also boasted that title twice before, becoming the second player next to s1mple who achieved that three times.

It’s obviously not an accident. ZywOo led Vitality to their first Major on home soil in May 2023, where they hoisted the BLAST.tv Paris Major. The 23-year-old was awarded with the MVP award of the event. Besides claiming a Major trophy, ZywOo and Vitality have numerous other gold medals under their belt, being undoubtedly one of the greatest teams of the current era.

Stewie2K is one of North America’s most well-known Counter Strike and VALORANT players.

The 25-year-old cemented himself as one of the five North American players to come back against FaZe Clan in the final of the ELEAGUE Boston CS:GO Major 2018. It’s the only CS:GO Major won by a North American squad.

After months of ups and downs, Stewie2K retired from Counter-Strike and transferred to VALORANT in July 2022 to become a full-time content creator. But when CS2 was announced on March 22, the American shared that he was “ready to grind” again. On March 29, he joined Legacy on loan, marking his official return to professional action.

With several best-selling cookbooks under her belt, the American model and TV personality Chrissy Teigen is crowned first place as the highest-earning foodie influencer on Instagram across the US and Canada.

The popular star has also been featured on several cooking channels, such as Cookies and Cocktails and Chrissy Teigen’s Hungry. She also launched her own cooking website back in 2019. Therefore it’s no wonder that the well-known star is estimated to make a whopping sum per sponsored post on the social media platform.

Some of Teigen’s favourite food spots include Giorgio Baldi, a popular restaurant on the Pacific Coast and Via Veneto, a lively Italian eatery in Santa Monica that combines organic and locally sourced ingredients with its creative cuisines.

Methodology

Using a list of articles such as Time Out and Luxury Columnist, we created a seed list of the top foodie cities around the world. With this list, we then used Numbeo to source the average cost of a cheap restaurant as well as the cost of a three-course meal for two people at a mid-range restaurant. Please note that each currency used was also taken from Numbeo. This data was collected on 01/08/2023.

Then, using Trip Advisor, we gathered data on the number of cheap, mid-range, and fine-dining restaurants by using the relevant filters on the site. The data collected was solely based on the number of restaurants from within each city, not including nearby areas. Data collection of this was completed on 21/08/2023.

To calculate per 10,000 population, we used City Population to search for each city’s population. We took the most current data available for each location and only considered cities with more than 50,000 population. This data was completed on 16/08/2023.

To find out which cities are the most Instagrammable, we used Instagram to search for various hashtags relating to each city e.g. #[CITY]foodie. This data collection was completed on 22/08/2023.

Using various articles from Google, our friends also compiled a list of the top foodie influencers, considering how many followers they have on the social media platform. We then calculated their highest estimated potential earnings per sponsored post by using the Instagram Influencer Sponsored Post Money Calculator. The data collection for this section was completed on 23/08/2023.

Textile Artist Spins Wool Into Metaphors

Raw material: Wool. Operating mode: the hook.

Nice, France textile artist Stéphanie Lobry frantically fashions her art with an unexpected yet satisfyingly fitting leitmotiv: feminism.

A Teacher when she’s not at the loft, where she created and exhibited her works, Stéphanie Lobry is busy hanging a crochet. Entitled 1.8 cubic meter, “parce c’est la taille qu’il fait”, lies in the piece, in the middle of a crowd of scattered bodies which share this small space with balls of yarn and needles.

If we pay attention to all red wires that surround and hang throughout her living room, we realize that they are, in fact, a gun.

“I wanted to divert the everyday objects. And to do so with needles and wool. No, no to knitting scarves for her daughters in some kind of ‘good housewife’ role, but rather to rediscover the woman inside, and then to discover humans in general.”

Why crochet? Rolled cigarette in mouth, she passes a nonchalant hand into blond spiky hair. She thinks… “This practice is also ancestral, but has potential for feminist messages and aesthetics when it is diverted from its original use and put towards the service of art. I’ve always been very creative and a little hyper active yet the only compliment I could expect from that was to be commended for being a good mother…”. I got fed up.”  Reduced once too often to the status of “the good historical female”, Stéphanie Lobry “lost it”and held her first exhibition.

Our compulsive crocheter remembers having hesitated….stalled somewhere between a choice of direction. Between science and art: “When I started my studies in molecular biology, my mother asked me if I was sure didn’t want to make fine art instead.” Would an academic focus on science bind her passions?  In her artistic process, she discovered that there was in fact a synthesis manifested through the act of the creation, which after all, begins with the cells inside the brain. Fittingly, her art work began with a small croqueted skull which “immediately went to Gallery’. The creative process then dissected and took over other parts of the body.

An Ariane of modern times

Sweeping my gaze around her workshop, it stops suddenly on the croqueted heart, “it was a participatory project I created shortly after Charlie.” Surely a way to re – unite people, to reconnect, “everyone needed it.” The artist put out a call using social media, letting all participants know that their name would be displayed at the bottom of the finished work. In a few weeks, she received 763 balls of wool, from more than 120 donors, scattered to the four corners of the world, from Paris to Noumea, the Chile, the Belgium and the Greece.


A Runaway success requires a lot of hard work.
It takes almost a month to sort the fabrics and create a ball that weighs more than 40 kg. As for the hook… 45 days are necessary for the realization of a typical piece of finished work: “the ball weighed a ton! I couldn’t do more than five knots without being exhausted.” It is a technique so grueling and time-consuming, but I feel like I’m really at the beginning, I still have a lot to say.” She seems to have found her way alright and is brimming with ideas to express her commitment.

Worried perhaps about her peers who see their emancipation sometimes as endangered, this knitter doesn’t fail to hang onto a hint of conviction to her works. I remember especially this sort of determined representation that she had given at the Théâtre National de Nice, last May, dressed in a full suit. Knitted of course. Pourquoi le crochet ? Cigarette roulée au bec, elle passe une main nonchalante dans ses blonds cheveux en bataille. Elle songe… « Cette pratique aussi ancestrale soit-elle, prend des allures féministes quand elle est détournée de son utilisation pour se mettre au service de l’art. » Car c’est bien avec une volonté libératrice et féministe qu’elle s’est lancée il y a maintenant sept ans : « J’ai toujours été très créative et un peu hyper active pourtant le seul compliment que je pouvais espérer c’était d’être une bonne mère de famille… J’en ai eu marre. » Réduite une fois de trop au statut de BMF, Stéphanie Lobry « pète les plombs » et organise une première exposition.
Alors que les curieux s’aventurent dans ses appartements, elle les reçoit en nuisette, repassant chemise après chemise, la main collée à son fer. Et si l’on prête attention à l’ensemble de fils rouges qui l’entourent et parcourent son salon, on s’aperçoit qu’ils forment, en fait, un pistolet. « J’ai voulu détourner les objets du quotidien. » Elle se munie dès lors d’aiguilles et de laines. Non, pas pour tricoter des écharpes à ses filles en bonne femme d’intérieur, mais plutôt pour redécouvrir l’intérieur de la femme, puis de l’humain en général.
Rencontre logique. La crocheteuse compulsive se souvient avoir longtemps hésité entre la science et l’art : « Quand j’ai commencé mes études en biologie moléculaire, ma mère m’a demandé si j’étais sûre de ne pas vouloir plutôt faire les Beaux-Arts. » Alors autant entreprendre une reconversion qui pourrait lier ses passions et ses connaissances. Dans sa démarche artistique, elle revient donc à la genèse de la création, qui commence avec des cellules. Elle commence avec un petit crâne « tout de suite parti en galerie », puis dissèque et reprend toutes les parties du corps. Du neurone au pied. Du sexe aux poumons.


Une Ariane des temps modernes
En balayant du regard son atelier, elle s’arrête sur le cœur, « c’était un projet participatif que j’ai crée peu après Charlie. » Surement une façon de re-fédérer les gens, de renouer les liens, « tout le monde en avait besoin. » L’artiste lance alors un appel sur les réseaux sociaux, tous les participants verront leur nom affiché au bas de l’oeuvre. En quelques semaines, elle reçoit 763 pelotes de laines, provenant de plus de 120 donneurs, dispersés au quatre coins du monde, de Paris à Nouméa, en passant par le Chili, la Belgique ou la Grèce. Succès fulgurant. Travail titanesque en perspective. Il lui faut près d’un mois pour trier les tissus et constituer une pelote de plus de 40 kilos. Quant au crochet… 45 jours nécessaires à la réalisation de l’organe démesuré. « Les aiguilles étaient énormes et la pelote pesait une tonne ! Je ne pouvais pas faire plus de cinq nœuds sans être épuisée.
Une technique épuisante donc et laborieuse que la « quinqua » ne compte pas abandonner de si tôt: « J’ai l’impression que je ne suis vraiment qu’au tout début, j’ai encore beaucoup de choses à dire. » Sorte d’Ariane des temps modernes. Elle semble avoir trouvé sa voie grâce au fil et regorge d’idées pour exprimer son engagement. Inquiète au sujet de ses consœurs qui voient leur émancipation parfois en péril, cette tricoteuse ne manque pas d’accrocher un soupçon de conviction à ses œuvres. On se souvient notamment de cette représentation qu’elle avait donnée au Théâtre National de Nice, en mai dernier, enfermée dans une combinaison intégrale tricotée comme dans sa condition féminine, attendant qu’on tire sur les fils pendants pour la délivrer. Une cause qui lui tient à cœur, une métaphore filée sur l’ensemble de ses créations.

River Water Levels Are Favorite Discussion Among Ontario Paddlers

Is the water level in the river going to be okay for canoeing or kayaking on any given weekend?

This is a common question that people call the GRCA to ask. It is also an important question. Usually what  they mean is ” will there  be enough water?”, but occasionally, there is actually way too much water for most people to canoe or paddle safely.

Fly fishermen too need to check river levels so they are safe and don’t get swept off their feet by a strong current.

An angler will likely move to a different area rather than take a chance. As an organization, the GRCA does not make recommendations as to appropriate water flows for recreational activities along the Grand River and its tributaries because there are many variables to consider. Some people have the expertise and training to enjoy high flows that could be fatal to inexperienced and ill equipped paddlers.

Very low flows make for slow going as there may not be enough water for the canoe to float and it may need to be pulled to deeper water at certain times. A skilled paddler will be able to read the water to find the deepest water and will have fewer problems. Some people have a bad day if they have to step out of their boat even once, while others are more tolerant of low flows. That is why there is no definitive answer to this question.

Appropriate water levels are a favorite discussion among paddlers. Those who paddle regularly have their own personal chart, whether it is in their head or on a spreadsheet.

Checking flow information

Many avid river recreation enthusiasts in Southern Ontario bookmark the River Data section of the GRCA’s website and check it when trip planning. This is one of the most visited sections on the GRCA’s website and provides hourly updates on river flows from 39 gauges on the Grand and eight tributaries. Some gauge information is also posted on an Environment Canada website that includes rivers in other parts of Canada, but the GRCA site has data for more gauges from this
watershed.

The main chart here is called the Flow Summary.

Recreational users should pay attention to the column headed “flow.” This one is measured in cubic metres per second or cms. If the rate is 10 cms, that means that 10,000 litres of water is moving past the flow gauge each second at this part of the river. The cms gets bigger as the river moves towards Lake Erie. There are huge changes in river flow due to seasons, weather, ice jams and dam operation.

Compare this to the “summer lowflow” which is the average flow during the dry summer months and you will see in relative terms how much water is flowing down the river. Following this Flow Summary is a list of sections of the rivers and tributaries with graphs. For example, one of the most popular sections of the river for a day trip, Cambridge to Paris, a paddler would check the Galt gauge on the “Middle Grand River“section. The graph will tell you if the level is going up, down, or holding steady. Occasionally a flow gauge does not operate and the information can be inaccurate, so the information is provisional. There is also a River Flow Information line that is updated regularly and can be reached at 519-621-2763, ext. 2511.

Outfitter information

There are several local outfitters in the area and they have cut off levels, when they stop canoe rentals. Canoeing the Grand in Kitchener has a safety section on their website with a five step rating chart for paddling. This scale  goes from “Excellent” to “No Go” with five levels, depending on the paddler’s age, skill, expertise and river conditions.

When river flows skyrocket

As the graph above shows, the Grand River may not give much warning of a sudden increase in river flows, which is why the GRCA must sometimes issue high water safety warnings to the public. This is the flow information from the week of May 2 to 9 from a few years ago. Note that it shows heavy rain on Thursday night May 3 in the northern part of the watershed meant flows ballooned from 8 cms to 120 cms within a couple of hours, as the data from Marsville shows. The GRCA issued a warning after the storm. The rainwater gushed down the river and by the afternoon of Friday May 4, flows were dropping at Marsville but skyrocketing at West Montrose. By Saturday May 5, the river flows in Brantford were extreme and then they peaked at York on the southern Grand on Sunday.
A final important note, Dams can make the impact of a rainstorm less severe but they don’t eliminate flooding or high flows.

GlobalData : Travelers From Japan To France Set To Reach 1.3 Million By 2023

The number of international travelers from Japan to France is set to grow from 1.1 million in 2019 to 1.3 million in 2023, increasing at a compound annual growth rate (CAGR) of 4.6%, says GlobalData, a leading data and analytics company.  

GlobalData’s latest report: ‘Tourism Source Market Insight: Japan’ reveals that the Japanese are specifically drawn to Paris due to their perception that it is a romantic city. 

Ralph Hollister, Travel and Tourism Analyst at GlobalData, comments: “This substantial growth forecast illustrates that the Japanese source market is willing to sacrifice affordability and sometimes accessibility due to the cultural draw of a destination. The city is a popular tourist destination due to Japan’s fascination with all things French; cities such as Tokyo are filled with French patisseries and luxury French fashion outlets such as Chanel and Louis Vuitton.”

According to GlobalData, France overtook Guam in 2018 to become the fifth largest outbound market for Japanese travelers. Guam is a destination which is much closer to Japan (average flight time of 3 hours 45 minutes, compared to 12 hours 50 minutes to France), thus making it more accessible and affordable also. However, Japanese travelers are willing to sacrifice these vital aspects of a holiday in order to experience  the French tourism product, due to the nation being heavily romanticized by the Japanese media. 

Hollister continues, “Air France and New Caledonia-based Aircalin have renewed their codeshare agreement for five years in October 2019. The airlines offer a daily service between Paris and Noumea, with additional frequencies during peak periods and optimized connections at Tokyo Narita and Osaka Kansai airports. This renewal will no doubt contribute to this accelerated growth rate.” 

It is clear to see that the majority of Japanese travelers are flocking to Paris, contributing to the growing issue of over-tourism in the capital. Atout France – the national tourism development agency, should focus on promoting less touristic cities to the Japanese source market such as Bordeaux. This city is popular for its gastronomy and many chateaux’s (castles), which are the type of famed stereotypes that attract Japanese travelers.

What Keeps The Mona Lisa Smiling?

This is the most famous painting in the history of art. Every year 8.5 million visitors see the renowned work of art that is the Mona Lisa. It is a vision that graces t-shirts, calendars, coffee mugs, and art history books worldwide. Still, among those millions, I would wager that few are those that have left Paris remarking on the wall on which Mona is placed. More on this later….

Did you know that the Mona Lisa is the only work of art to be stolen from the Louvre( in 1911) and recovered? Not only that, but in 1956, it was attacked with acid and, in that same year, cut open with a rock thrown at Mona’s elbow. It would seem that times haven’t changed much either. In 2009 a coffee mug was thrown at it by a gazing woman.

Time has provided the foresight to maintain Mona’s beauty. With 2 centimeters of bullet proof glass and an inner casing protecting against heat and humidity the artwork seems safe. But what about the wall ‘holding’ the Mona for all of us to admire?

As a dentist I am prone to notice the wall and that famous Mona Lisa smile. That smile, seen on TV and used in advertising everything from vacations to toothpaste, would be worth little without considering the healthy gums and bone that keep it in place. In other words, without noticing the wall. Years spent in my business have taught me, that if not protected properly, a smile can be stolen from us, chipped, and worn away with acid leading to very costly repairs. If you value your smile then the bullet proof glass is a worthy investment.

By focusing on in-office prevention and care the need for extensive intervention is often averted. It is more time and cost effective to put up and maintain a very impressive wall for your work of art than it is to meticulously rework the masterpiece. This analogy holds true for your teeth, gums and your smile. Maintenance is the greatest security from acid and coffee alike and with it, your smile can continue to break the ice… but I wouldn’t count on 8.5 million visitors. I’ve seen some crazy designs that really add some character to a person’s wrist such as koi fish, skull heads and zodiac signs.

So back to the main question and one particular brand that has stood out is Golden Concept. Again, it’s all about personal touches these days and being unique. What are the top three luxury items or brands that have captivated your own attention right now?

Right now there are three top brands that are top-of-mind for me right now. These are Emperada Cigar Humidor by Imperiali Geneve; Astonomia Tourbillion by Jacob & Co; and Bentley EXP 10 Speed 6 Concept car.

Not everyone can afford luxury brands. What would you suggest for those who have the desire to appear high end but not necessarily the means?

There’s actually been a lot of hype surrounding brands that cater specifically to people who enjoy the “finer things” but are limited by what’s in their wallet. Many bloggers, for instance, are always writing about the newest gadget, accessory or clothing. I would recommend finding a few that fit your style and follow them on Instagram to see what it is that they’re rocking on a day to day basis. Many people have to understand that your average blogger is there to inform the public on some of the newest fashion do’s and don’ts, and these are all done with new brands or affordable pre-existing brands.

Second, which I have seen quite a bit, is on Kickstarter or similar sites that are always offering “perks” for those who invest early in their brands. Without naming names, a few brands offered a discounted handmade Italian leather, skeleton movement watches for a fraction of the cost to the first “so many” number of investors.

Just keep in mind for everything high-end there is always a cheaper counterpart. Don’t worry just about name brand or high end. All that matters is that it looks good and makes you feel great.

For those who focus on products that are affordable luxury, who are some of the brands doing the best and what are the keys to success?

One of the biggest and most successful brands that I have seen that caters more towards the everyday luxury is Tory Burch. Although TB is for women, I have on many occasions bought it for family, friends and clients so I can safely say I have quite a bit of exposure to this brand and can thus speak with some confidence. Obviously, price point for TB is well within the means of many. Besides that, what is it that has led TB to such success? I would say three main factors: relate-ability, professionalism and seamlessness. Relate-ability in that walking through the concrete jungle that is New York, TB products have always caught my eye in their simplicity but also how stylish it is, whether on a working woman running into Starbucks or that beautiful lady going to brunch. Second, professionalism – although many brands always stress the attentiveness of the staff, it pales in comparison to TB. People have to understand that often times upper tier luxury items are for a certain group and employees are naturally prejudiced to people who they perceive not to be at that level. There have been times where I would walk into a Rolex store unattended for 15 minutes and the instant my AP peaks out from under my shirt, someone is there to help. This just doesn’t happen at TB and for that I am quite appreciative. Seamlessness in TB’s product, in that it offers just the right amount “je ne sais quoi.” Most of their products can be matched with a variety of other brands. This has all led to the tremendous success that TB has experienced over these past few years.

What are the top three factors that truly set an ultra-premium wine, champagne or spirit brand apart from less costly luxury beverage counterparts, wine and otherwise?

Marketing wine for the luxury market is a really tough job to do. Quite frankly it’s because you’re trying to appease a group of people who have seen it all. People always say when you do something for long enough, whether you want to or not you will become a bit of a connoisseur. That’s especially true for those in the wine industry. Most are well educated, well informed and have a true passion towards exploring the finer points of what’s in a wine bottle. If we were to say that all wines in the luxury market were of the same caliber, there would still be so many factors in play, the first being accessibility and quantity. Many luxury wines are such because there is a limited supply. You can’t expect a brand to sell at the same price point when there are only 10,000 bottles as compared to 100,000 bottles. However, although there are still 10,000 bottles that were produced, that doesn’t mean your everyday Joe would be able to get his hands on them even if he’s willing to dish out the necessary cash. Thus, there’s another added premium to an already sky high price.

Another example is time and care. For those who are only there to turn a quick profit, the longer time they spend on making a wine, the more money that needs to be invested. That in itself increases cost and decreases profit. This is why sometimes you have wineries that will actually keep the wine in their cellars for years after bottling to ensure that the wine has at least matured to a passable level. By care, I mean winemakers are very passionate about their craft and thus hate having their name associated with sub-par wine. Thus, you have some years where there is little to no wine produced by a certain grower because only a small amount of the grapes harvested passed the standard or none at all.

Never one to rest on his laurels and even amid a diversity of endeavors, Shu continues to raise the bar for himself professionally and personally. Whether it be as an active investor looking for the latest innovation in the luxury and tech space or, despite his jam-packed schedule, his current pursuit of an Ivy League Master’s degree at Columbia University. THE HOLIDAY KOSHER BAKER has desserts that follow the latest trends but also recipes that remind us of those our grandmothers used to make – but with Paula’s distinctively modern and healthier twist.
Even modern Jewish bakers gravitate towards traditional Jewish recipes when they bake for Rosh Hashanah. Maybe it is because Rosh Hashanah, one of the most significant holidays of the Jewish calendar, deserves baked goods that are central to the rich Jewish culinary tradition. These classics include rugelach, strudel, babka, honey and apple cakes, and, of course, round challahs.
“I have always tried to honor tradition, because I want my children to grow up appreciating classic Jewish food, but I have tried to vary the recipes to make them more interesting to a modern audience,” Paula explains. Paula’s take on babka are mini babka bites, she turned honey cake into crunchy biscotti and below recipes for a strudel that combines fresh and dried fruit, and challah rolls filled with the classics: apples and honey.
This New Year, sweeten up your dinner table with two of Paula’s delicious recipes:

Apricot and Berry Strudel
Makes 2 rolls, serves 10
For this recipe, I took apple strudel, a delicious dessert that has been absent from holiday tables since my childhood, and instead substituted berries and dried fruit for the apples. You could also make this dessert with plums, or substitute dates or dried figs for the apricots. You will have enough filo to double the recipe and can easily double the filling to serve more people.  I always thought the filo came in large boxes and needed trimming, but recently learned that it also comes in smaller, about 8 X 12-inch, sheets.  They are easy to work with and were used to make the cute rolls pictured here.
1 cup dried apricots, chopped into 1/3- inch pieces
1 ½ cups (6 ounces) blackberries or blueberries
3 tablespoons sugar
1 tablespoon cornstarch
1 pound filo dough (8 X 12-inch sheets), thawed according to package directions
Spray oil
Preheat oven 350°F.  Line a jelly roll pan with parchment. Set aside.  Place the chopped apricots and berries into a medium bowl.  Add the sugar and cornstarch and toss lightly.  Set aside.
Have ready a clean, damp dish towel. Place a large piece of parchment paper on the counter. Take the filo out of its package and unroll. Separate one sheet and place on top of the parchment.  Spray with the oil. Place a second sheet on top and spray again. Repeat with two more sheets. Cover the remaining filo with the damp towel.
Place ½ of the filling along the long end of the filo, two inches from the edge.  Fold the right and left sides (the short sides) in one inch. Starting from the side with the filling, roll up tightly until you have a long log. Place on the baking sheet. Repeat to make another log.
Bake for 40 minutes, or until lightly browned on top.  Let cool and cut into two-inch slices.  Serve warm or at room temperature.   Store covered at room temperature for up to two days.  Reheat to serve.
Apple and Honey Challah Rolls
Makes 24 rolls  
I filled these delicious rolls with cooked apples and honey, which we eat at the beginning of the meal and wish everyone a sweet new year.  Almost every year on Rosh Hashanah I host at least 25 people in my home.  I give each guest their own small plate with a challah roll, apple slices and small bowl of honey to save some of the time that slips away when passing these essential holiday elements around the table.  Perhaps I invented these challah rolls that are filled with sautéed apples and honey to further streamline the entire beginning of the meal? 
Dough
1/2 ounce (2 envelopes) dry yeast
1/2 cup warm water
1 cup boiling water
½ cup cold water
½ cup plus 1 teaspoon canola oil, divided
1 tablespoon salt
2/3 cup plus 1 teaspoon sugar, divided
3 large eggs
1 teaspoon pure vanilla extract
2 teaspoons cinnamon
6 ¼ to 6 ½ cups bread flour
Apples
5 Gala or Fuji apples
2 tablespoons oil
1/3 cup light brown sugar
1 tablespoon honey
2 teaspoons cinnamon, divided
2 pinches nutmeg
Glaze
Reserved egg plus 2 teaspoons water
1 tablespoon honey
Place 1/3 cup warm water into a liquid measuring cup.  Add the yeast and teaspoon sugar and mix.  Let sit five minutes, or until thick.  Meanwhile, in a large mixing bowl, place 1/2 cup of the oil, salt and 2/3 cup sugar.  Whisk well.  Add the boiling water and whisk to dissolve the salt and sugar. Add the cold water and mix again.
Beat the eggs in a separate bowl and add to oil mixture, reserving one tablespoon to brush on the loaves.  Cover the reserved egg and place in the fridge.  Add the vanilla and cinnamon to the bowl and whisk in.  Do not worry that the cinnamon does not dissolve; it will mix in later.  When the yeast bubbles, add the yeast mixture to the bowl and stir.
Add 6 cups of the flour, one cup at a time, mixing the flour in completely after each addition. You can use the dough hook in a stand mixer.  Place the dough on a floured surface and knead until smooth, adding flour a little at a time from the remaining ½ cup. The dough is done when you rub your palm across the dough and it feels soft.  Shape the dough into a ball.  Lift up the dough and add the remaining one teaspoon oil to the bowl and rub all around the bowl and on top of the dough. Place the dough into the oiled bowl and cover with plastic wrap. Let rise one hour.
Meanwhile, prepare the apples.  Peel and core the apples and cut into 1/4-inch cubes.  Heat the oil in a large frying pan over medium heat.  When hot, add the brown sugar, 1 teaspoon cinnamon, nutmeg and apples.  Cook for 5 to 10 minutes, stirring often, until fork tender. You do not want them to be too soft.  Add the remaining teaspoon cinnamon and honey and stir.  Scoop into another bowl and let cool.  If any liquid remains in the bowl, strain out before filling the rolls.
Cover two cookie sheets with parchment paper or silicone baking mats.
When the dough has risen, divide into 24 pieces. Roll each piece into a ball and then roll between your hands into an 8-inch strand.  Place horizontally in front of you and use a rolling pin to roll the dough until it is about 4 inches wide.  Add one heaping tablespoon of apple filling and use your fingers to spread along the dough the long way.  Fold one long side of dough over the filling and then roll up to close.  Pinch the edges closed, tucking in any apples that try to escape.  Tie each strand into a knot, pulling an end through the top to look like a button, or shape into a spiral by coiling the strand around and tucking in the end.  Place on the prepared baking sheets and cover with plastic wrap.  Let rise 30 minutes.
Preheat oven to 375°F.  Take the reserved egg, add two teaspoons water and one tablespoon honey and stir.  Brush the tops of the rolls.
Bake for 20 to 25 minutes, or until lightly browned.  Store covered at room temperature for up to three days or freeze for up to three months.

McMaster University Art Show Was Organized By UK Architectural Association

In 2014 McMaster Museum of Art presented GOD & CO: François Dallegret Beyond the Bubble.  An exhibition organized by the Architectural Association, London UK

François Dallegret trained as an architect at the École des Beaux-Arts in Paris in the late 1950s.  He moved to North America; first to New York and then Montreal in 1964. Dallegret has since and continues to slip between disciplines, working as an artist, entrepreneur, theoretical architect (before the term was in general use), industrial and graphic designer, writer and social commentator.

Although his work over the past fifty years has been firmly planted within the possibilities offered by contemporary technologies—his 1964 drawing of a personal, wrap-around electronic communicator l’intro conversomatic has become a commonplace reality in the current world of smart phones & “pads”—Dallegret can be seen been in the context of 19th century idealism; the engineer as artist, the inventor as philosopher and so on.  And while his work carries the sense of wonder of the modern age, manifest in the pure beauty of the object, it is also tempered by the realities of social, economic and cultural issues, and often framed with a quixotic sense of humour and irony.

GOD & CO offers a unique view into Dallegret’s work and activities, a de facto retrospective that engages his  active thoughts. Organized by the Architectural Association School of Architecture (UK), it opened in London in late 2011 and has subsequently been presented in Paris and Zurich. This was the first presentation In Canada.

Paris (Ontario!) for the Holidays

That’s Paris, Ontario. This lovely town of about 12,000 is an easy hour and a half hour drive from Niagara. It was amalgamated in 1999 to the County of Brant but the locals don’t like to admit to it. It’s named for the nearby deposits of gypsum used to make plaster of Paris. It is referred to as, “the cobblestone capital of Canada” because of the towns large number of aged cobblestone homes.

When I arrived a few weeks ago to do Christmas shopping, I found a vibrant downtown tucked away in a wide valley. It was sheltered from big-box retailing and I soon learned chronic 21st century hurry-up ism wasn’t here either. The place reminded me of earlier times when I would walk the downtown of my own hometown. The pace was slow. It reinforced in my mind, how nice the world can be.
Parking is free along Grand River Street, the Main Street, and there’s lots of interesting stores to explore.

Always looking for a “sweet deal” I stumbled upon Chocolate Sensations Silo Direct Link to Chocoloate Sensations Website Like so many other shops in town, this delightful aromatic place is family owned by John and Sarah Chalmers. John said, “This business began as a humble home-based hobby in a family kitchen over 20 years ago. Today we do a thriving on site business and a large volume of catalogue sales”. Once inside chocolate enthusiasts will think they have died and went to chocolate heaven. I recommend before you leave take home some Christmas, Candy Cane Bark. Come on, you can afford to take out the belt a notch, after all it’s Christmas.

Next door is a “cheesy place”. The Three Blind Mice Cheese Company Silo Direct Link to Three Blind Mice Cheese Company WebsiteOkay, I promise no more cheesy stuff. The owner, Lindsay Dawdy with an ear to ear smile said, “We only opened in June of this year and so far it’s been a runaway success. So much so, we’ve opened another store in Elora”. Believe it or not, this is a fun place. Step inside and see what I mean. Ask Lindsay to push the reset button on her 1951 Juke Box and you can hear one of your golden-oldies. Sticky Toffee and Wensleydale with Cranberry are the featured cheeses for the holidays.

Down the road is the John N Hall House of Quality Linens. This is an old-fashioned dry goods store. Their heavy front doors are the same ones customer’s have been pushing since the 1860’s. If you’re looking for a ladies embroided white cotton nightgown or fleece or flannelette blankets you’ve arrived.

For starters, everything is made from scratch and from what I observed servers worked at spoiling their customers. They roast their own coffee and they specialize in nostalgic hard to find sandwiches like the classic Monte Cristo. The Apple Waldorf Salad platter is a crowd pleaser. I loved their Deep Dish Corn Meal Crust Quiche and hand crafted Hot Apple Fritters. The apples were prepared in front of me using an 1800’s hand operated peeler. I washed the meal down with chocolate milk delivered to my table in an old-fashioned dairy bottle. In the warmer months you can eat on the second floor outdoor patio that overlooks the Grand River that flows through town.

Before you leave Paris walk to the end of the town to the Williams Street Bridge and take a photograph of the back of these historic buildings that house these shops. It will be a keeper.

As I headed home I came across a group of people who were unloading Balsam Firs to be sold at their annual Christmas tree sale for St. James Anglican Church. It was a scene from a Norman Rockwell painting. One of the parishioners Steve Howes, who had lived in the town for 45 years told me, “This is a small town with a lot of heart. People still treat each other with respect. I wouldn’t want to live anywhere else”. That sums this town up nicely.
